Two-Bite Peanut Butter Cookies
Today I had two cravings: cookies and peanut butter. What I should make was pretty obvious.
Two-Bite Peanut Butter Cookies
recipe inspired by James Beard's American Cookery
Ingredients
1/2 cup peanut butter
1/2 cup butter
1 cup packed light brown sugar
1 egg
1 1/4 cups flour
1/2 teaspoon salt
Instructions
Cream butter and peanut butter. Add in sugar, then beat in egg. Slowly add flour and salt, mix on low speed until well-blended.
Roll the dough in parchment paper into logs about 1 inch in diameter. Freeze for 60 minutes. Meanwhile, pre-heat the oven to 375 degrees. Once the dough has hardened, remove from freezer and carefully roll out of the parchment paper. Slice log into 1/4" rounds. Place on cookie sheet. With a fork, gently press down on the cookie in one direction, then the other, making a crisscross design. Bake in the oven for 9-10 minutes, until slightly brown on top.
Serve with milk.

ReplyDeleteI want to make my own oreos and thought this was a good way to experiment with rolling the dough in parchment - which is really hard!
