Heirloom Tomato Salad with Goat Cheese


I got a very pleasant surprise this week when I was unloading the groceries and saw two gorgeous heirloom tomatoes in the bag, one red and one yellow. You would have thought that I won the lottery! I love tomatoes, especially fresh tomatoes. And for tomatoes this delicious, I wanted them to be the focus of my salad, and not just a topping. Plus, salads that are mostly lettuce are boring!

Heirloom Tomato Salad with Goat Cheese
serves 4

Ingredients
two heirloom tomatoes, chopped
1 head romaine lettuce
3 slices red onion
3 carrots, peeled
1 package peat shoots
1 oz goat cheese (optional)
balsamic vinegar

Instructions
Wash all produce. Slice onions into rounds, then cut rounds in half. Peel carrots into ribbons. Separate lettuce leaves and chop into bit sized pieces. Chop tomatoes.

To assemble the salad, divide each ingredient and layer in this order: lettuce, tomato, carrot, onion, pea shoots, goat cheese. Sprinkle with balsamic and enjoy!

Two tomatoes doesn't sound like a lot, but these tomatoes were huge. This salad is so easy (did I really need to write out the recipe? maybe not..) and so fresh and the tomatoes really shine through. If you see heirloom tomatoes in your local market make sure you pick some up!
